Ingridients:
- 3 chicken breast tenderloins
- 1/4 cup of finely grated parmesan
1/2 cup Italian Breadcrums
- 1 whole egg
- 1/2 cup of flour
- two shallots, minced
- 1/2 cup of white onion, chopped into thin slices
- 4 inch long cut of french bread
- Lots of salad
- Sesame Spray ( 1 calarie per spray, only use if needed)
Directions
- Pound chicken untill 1 centimeter thin. Arrange flour in one bowl, egg in another, and breadcrumbs and parmesan in another bowl. In a nonstick sautee pan heat 1 tablespoon of olive oil. While heating, make the chicken by lightly drenching in flour, then coating in egg, and then coating in breadcrumb mixture. Put in pan and cook for two minutes per side untill very browned.
- Let cool, and add onions, shallots and the bread cut as big croutons into the smae pan you cooked the chicken in. Cook for four minutes untill onions are carmelized and bread is flavor filled. The bread is not going to be crisp! Put salad in seperate bowls and add onion-bread mixture on top. Cut the cooled chicken on a diagnal line and even out beetween the three servings. Serves three. Enjoy!

ReplyDeleteI like chicken salad and this sounds like something to try. I had a cobb salad for dinner tonight so I'm sure I would like this as well. It is really neat that you make these things up as you go along.
ReplyDeleteThanks, I like this because it is like chicken piccata on a tasty onion salad. Some mushrooms are great also. Some people don't like any dressing and you don't need any, but I like a really light, tangy spray. I use Newmans 1 calarie spray,becuase it is healthy and delicious! this beats any cobb salad!
ReplyDeleteI make broiled chicken but I should jazz it up some. Do you have any suggestions for something simple with chicken thighs that is easy and would broil in a small oventop broiler.

ReplyDeleteI had this problem once. I was making a dinner party with and my uncle has had a heart attack. He could only eat the delicious rice pilaf, and basically everything else, except the main course: Chicken with Terragon Cream Sauce.
So, I pounded some raw chicken, (breast, tenderloin, thighs, etc.) and put it in a lightly oiled baking dish. You can now improvise. I put some herb de provence, a delicious dried herb mix, but you could use anything. Then I cook it untill tender. You could even make chicken picatta, but cook in the a broiler! Make it however you like, and you can expreiment on different nights if you have left over chicken.

ReplyDeleteDom-- I found it on Google Images, and loved it. At first I searched Chicken Piccata, b/c it is basically a Chicken Picatta salad, but all of them looked too jazzed up, so I thought it would be cute to just have a Chicken!!
